1 tbsp extra-virgin olive oil
1 medium onion, chopped
2 garlic cloves,minced
2 medium carrots, sliced
2 celery ribs, sliced
1 tbs thyme
1 bay leaf
2 qts chicken stock
1 cup water
1 pkg rice in bag, uncooked
1 1/2 cups shredded cooked chicken breasts
salt and pepper

Directions:
Directions:
Place a soup pot over medium heat and add olive oil. Add onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes until vegetables are softened but not browned. Pour in the chicken broth and water, bringing liquid to boil. Add in rice and chicken, season with salt and pepper. Cook on medium-low heat until rice is tender.
