4 c diced peeled Tomatoes (about 2 lbs)
5 stalks Celery, finely diced
2 Apples, peeled, cored & diced
1 small Sweet Green Pepper, seeded and finely chopped
1 small Hot Red Pepper, seeded and finely copped
1 small Onion, finely chopped
1/2 Sweet Red Pepper, finely diced
1 c White Vinegar
1/3 c Granulated Sugar
1/2 tsp Pickling Salt
3 Cinnamon Sticks. each 3 inches long
1 one inch piece dried Whole Ginger
1 tsp Whole Allspice Berries

Directions:
Directions:
Place tomatoes, celery, apples, green pepper, hot pepper, onion, red pepper, vinegar, sugar & salt in a large stainless steel or enamel saucepan.

Tie cinnamon, ginger & allspice in a small square of cheesecloth. Add to vegetables. Bring to boil over high heat, reduce heat and boil gently, uncovered for about 11/2 hours or until mixture is thick, stirring occasionally. Discard spice bag.

Remove hot jars from canner and ladle sauce into jars to within 1/2 inch of rim. Process 15 minutes for half-pint jars and 20 minutes for pint jars.
