Prep Today, Cook Tomorrow
1) Cut each pound of bacon into thirds to make it easy to open up.
2) Then cut again in half - the right size to wrap the Lil' Smokies.
3) Wrap each Smokie with a piece of bacon then stick a toothpick through it.
4) Place wrapped Smokies into crock
5) When about half of your Smokies are in the crock, sprinkle about a cup of brown sugar on top.
6) Finish adding wrapped Smokies to the crock.
7) Sprinkle more brown cup of sugar on the top until covered.
8) Cover and put the crock in the refrigerator over night.
9) About 4 hours before you are ready to serve, put the crock back in the pot and turn on high. Cook for 3 hours.
10) Remove the Smokies from the crock and put onto the baking pan
11) Broil until bacon is brown, about 10-15 minutes. The bacon will burn around the edges but that's ok.
12) Line the serving bowl with folded paper towels to soak up any excess grease.
13) On top of the paper towels, line the bowl with aluminum foil to help retain heat.
14) On top of the aluminum foil, line the bowl with waxed paper. This keeps the food from touching the foil.
15) Add the browned bacon-wrapped Lil' Smokies to the bowl.
