iceberg lettuce
canned pineapple, diced, 2 T. per serving
canned beets
Greek feta cheese, crumbled, 2 T. per serving
2 slices tomato per serving
1 green onion per serving
1 pepperoncini green pepper per serving
1 Greek or black olive per serving

Dressing:
1/3 pt. olive oil, 1/3 pt. water, 1/3 pt. vinegar

Directions:
Directions:
In small bowl, combine all dressing ingredients and mix. For 4 large salads, use 1/3 cup of everything. Yield: 1 cup dressing

In individual bowls, place coarsely pulled apart lettuce pieces. Top with pineapple (do not drain too much since the juice will add flavor to the salad). Add rest of ingredients, in the order listed. Pour dressing over the top.
