3 tablespoons packed dark brown sugar
4 teaspoons prepared Chinese-style hot mustard or Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
1 pound salmon fillet

Directions:
Directions:
Combine brown sugar, mustard and soy sauce in small bowl; mix thoroughly. Transfer 1 tablespoon to another small bowl and mix in rice vinegar; set aside.
Brush one side of salmon fillet with glaze and place on barbecue glazed side down (medium heat). Grill for about 3 minutes. Glaze other side and flip and grill for another 2-3 minutes. When skin side is grilled it can easily be removed and glazed applied to fish. Transfer salmon to serving plate and drizzle with rice vinegar glaze and serve.
