4 eggs
3 cups sugar
1½ cups butter or margarine
5 overripe bananas
1 tsp salt
2 tsp baking soda
1 tsp vanilla
4 tbsp sour milk (milk + 1 tsp vinegar)
4 cups flour
Optional Ingredients:
6 oz of chopped walnuts or pecans
9 oz of semi-sweet chocolate chips
1 tsp cinnamon

Directions:

Combine milk and vinegar and set aside until needed. Preheat oven to 350º. Grease and flower a 9” X 13” cake pan.

In a large bowl, mix eggs, then sugar & butter. Mash bananas separately. Add bananas and remaining ingredients one at a time while mixing, with flour being last. Manually mix in optional ingredients with spoon or rubber spatula (i.e. no electric mixer). Reserve few of the optional ingredients. Pour mixture into prepared cake pan and gently shake it until batter is evenly distributed. Sprinkle reserved optional ingredients on top. Bake at 350º for 70 to 75 minutes. Remove when inserted toothpick comes out clean.

Set aside on rack until cooled completely. Cut to desired size (note – the cake will cut much easier and cleaner if chilled).
