Vidalia Onion Pie Recipe

2 large Vidalia onions chopped
½ stick of margarine or butter
1 tablespoon flour
1 small can evaporated milk
1/8 teaspoon salt
¾ cup milk
2 large eggs – beaten (or 3 medium eggs)
2 - 9 inch unbaked pie shells (1 deep, 1 regular) – frozen

Directions:

In large skillet, melt the margarine and cook the onions until they are limp. Do not brown them. Add all other ingredients, except eggs, and cook until thickened. Add beaten eggs and pour into deep pie shell. Cover with regular pie shell and brush with milk. Bake @ 425 degrees for 30-40 minutes until brown.

* When chopping the onions, don’t make the pieces too small. Mine are a little less than 1 inch square, looking at one of the outside layer pieces.
* I use Pillsbury fine flour for making gravies/sauces. It’s in a shaker (cardboard) can.
* The pie will have the consistency of a Quiche with a lot of onions.
* In the winter, I can’t get Vidalia Onions so I have now tried other sweet onions like Walla Walla. They work well also.
