1 minced onion
5 Tblsp butter
6 Tblsp flour
1 cup diced celery
3 cups milk
1 can cream of mushroom soup
1 small can pimento
4 cups cut up cooked chicken
salt & pepper to taste

Directions:
Directions:
Cook onion & celery in butter until soft. Add flour making a paste. Add milk & stir until thickened and smooth. Add soup and stir. Add chicken and pimento and season. Place in baking dish (may cover with crushed corn flakes if desired). Bake at 375º for 45 min's. May easily double or triple this recipe for large groups & place in a roaster.
