Crust: 1 1/2 cups flour
1/4 cup sugar
1/2 tsp b powder
1 tsp vanilla
1 egg
1 stick butter

Filling: 2 cups Lowbush cranberries (also called Lingonberries)
1/4 cup sugar

Frosting: 1/2 stick butter
1 cup coconut flakes
1 egg
1/2 cup sugar
1 tsp vanilla

Directions:
Directions:
Preheat oven to 375 º
Mix dry crust ingredients. Add softened butter, the egg and vanilla. Mix with a fork or your fingers. Press crust into a greased pie plate.

Spread cranberry-sugar mixture over crust and bake the pie for apprx 25 mins at 375.

Measure ingredients for the frosting and mix them in a saucepan over low to medium heat. Don't cook the frosting, keep stirring it until mixture looks smooth. Set it aside until the pie comes out.

Spread the frosting over the pie carefully. Bake the pie an additional 10 minutes or until coconut is browned a bit. (If I'm in a hurry, put it under broiler on the lower rack for a few minutes watching like a hawk).
