2 1/4 c. flour
1/2 t. baking soda
1/2 t. salt
2/3 c. butter
1 c. sugar
1 egg unbeaten
2 T. lemon juice
grated rind of 1 or 2 lemons

Directions:
Directions:
Sift then measure flour. Sift together 3 times with soda and salt.
Cream the butter, add sugar. Add egg, beating until well blended. Then add lemon juice & rind. Add dry ingredients, a small amount at a time, beating until smooth.
Chill dough in refrigerator until stiff, several hours. Roll dough on floured board very thin. Dip in granulated sugar. Place on ungreased baking sheet. Bake at 350 for 10 mins. in moderate oven. The cookies should bake without browning except for slight darkening around edges.
