1 pk. 10in. flour tortillas
3 c. white fish, shrimp, crab, or combination of such for filling
3 c. cheese (Monterrey jack or cheddar)

Sauce:
4 T. butter
4 T. flour
1 c. fish broth
1 c. light cream
1/2 tsp. salt
1/4 tsp. nutmeg
1/8 tsp. cyanne

Directions:
Directions:
Melt butter in saucepan. Whisk in flour. Whisk in broth, cream, and seasonings. Continue stirring for several minutes until thickened, but not boiling. Place small amount of sauce in 9X13 pan to cover bottom. Wrap fish/seafood mixture and half of cheese in tortillas, placing them seam side down. Pour sauce over stuffed tortillas. Top with remaining cheese. Bake at 350º for 30 min. or until bubbly and cheese is browned.
