2 1/2 lbs Large Shrimp (peeled & deveined)
1/2 bunch celery tops
1/4 c. pickling spice
3 1/2 t. salt
2 c onions
Bay leaves
1 1/4 c Vegetable Oil
3/4 c. White Vinegar
2 1/2 T. Capers
1 1/2 t. salt
Tabasco to taste (I'm a heavy shaker)

Directions:
Directions:
Steam Shrimp (Boil) in celery, pickling spice, and salt for 5 min (or done) then drain. Discard celery and spice. In a large bowl alternate sliced onions with bay leaves and shrimp. Layer of onions, then bay leaves, then shrimp, and keep alternating til done. In a bowl mix together oil, vinegar, capers, salt and tabasco then pour over shrimp. Refrigerate. We were always told that they would last up to 10 days or more but never got to test the theory. They disappeared too quickly.
