1 to 1 1/4 c. cold cooked meat
4 to 6 anchovy fillets
1 pc raw onion
1 stick unsalted butter
1 t. lemon juice
1/2 t. salt
freshly ground pepper

Directions:
Directions:
Cut meat into cubes about 1 inch. Rinse and dry anchovies. Insert metal blade for food processor and add meat, 4 anchovies and onion. Process for 60 sec., or til very finely chopped. Add butter, lemon juice, and salt and process til completely smooth. Taste for seasoning and add pepper, more salt, lemon juice or anchovy if you think it needs it. Serve on hot buttered toast, French bread or thick pumpernickle slices.

Great use for left-over well cooked pork, veal, chicken or turkey. trim excess fat. Pate' freezes well, wrapped in plastic.
