2 1/2 lbs. shrimp ( I used more)
1 T. salt
1/8 tsp. pepper
2 T. lemon juice,divided
3 T. vegetable oil
3/4 cup regular rice,uncooked
1/4 cup chopped bell pepper
1/4 cup chopped green onion
2 T. butter
3/4 cup slivered almonds
1/8 tsp. mace
Dash of cayenne
1 cup condensed tomato soup
1 cup whipping cream ( I use evaporated milk)
1/2 cup cooking sherry

Directions:
Directions:
Combine shrimp,salt.pepper and 1 T. lemon juice in a large kettle,submerge in water and boil shrimp until they are pink and tender. Drain and cool slightly. Peel,can used already peeled and cleaned. Combine remaining 1 T.lemon juice and oil;pour over shrimp and marinate 15 to 20 minute Cook rice according to pkg. directions and set aside. Saute' bell pepper and onion in butter until tender,stir into rice. Add shrimp and remaining ingredients,mix well. Spoon into a 3 qt. casserole and bake at 350* for about 55 minutes. Yields 6 to 8 servings.
NOTE: When I boiled my shrimp I added chopped onion and one bag of crab boil,omitting the 1/8 tsp. of pepper.
