1 T Onion chopped
2 - 3 Potatoes (peeled and cut in bite size pieces)
Carrots - 2 large or cup of baby carrots cut to bite size
Celery - 3/4 C chopped to bite size.
1 Can Cream of Celery Soup
1 C Diced Velveeta Cheese

Cook vegetables to just slightly tender. Brown beef & onion. Mix veggies & meat together, add soup, part of the cheese & spread in 9 X 13 pan, top with remainder of cheese & bake at 325 15 - 30 minutes.
