2 cans of Artichoke hearts (14 oz)
2 -1 lb can sliced potatoes
1 can pitted olives (sliced)
2 -7 oz jars red roasted peppers
3 cloves garlic (chopped or in pieces)
1 1/2 cup oil
parsley
grating cheese
2 cups of breadcrumbs

Directions:

pre heat oven to 450º

boil the artichokes for 5 min.
add the potatoes, sliced olives,
red peppers and garlic. Pour the oil in mix it up add the parsley, grating cheese for flavor and the 2 cups of breadcrumbs. mix once again bake uncovered for 15 - 20 minutes in a 9x15 pan
