For salad:

Spring/field mix
D'Anjou pears
toasted pecans ( I skip the toasting part)
grilled chicken breast (optional)
dried cherries
Gorgonzola cheese crumbles

Ingredients for Cherry Balsamic Vinegarette:

1/4 cup balsamic vinegar
1 T sugar
1 clove garlic, minced
1/4 cup cherry preserves
1/4 cup red wine vinegar
1/4 cup canola oil
kosher salt
fresh ground pepper

For Cherry Balsamic Vinegarette:

-In a small saucepan over medium heat, combine the balsamic vinegar, sugar and garlic and bring to a simmer, stirring frequently to dissolve sugar.

-Simmer mixture, uncovered, until reduced by 1/2, about 10 min

-Add the cherry preserves and cook for 1 min longer

-Remove from heat and let cool to room temp

-Whisk in red wine vinegar followed by the canola oil

-Season to taste with salt and pepper

-Toss dressing over spring/field mix, add chopped pears, pecans, dried cherries, Gorgonzola cheese, and chicken breast as desired.
