1 14 oz can black beans (organic are best), drained & rinsed
2 Small Tomatoes, seeded & chopped
1 Small Red Onion, diced
½ cup frozen corn, thawed OR can of Niblets, drained
1 Green Pepper, seeded & chopped
1/4 cup fresh cilantro, chopped (more if you like cilantro)
2 cloves garlic, minced
1 tsp ground cumin
½ cup vegetable oil
2 tbsp red wine vinegar
½ tsp salt
½ tsp fresh ground pepper
1 jalapeno pepper, seeded & chopped (optional)

Directions:

Combine all ingredients. Cover and refrigerate for at least 2 hours. Enjoy!
