Wet ingredients:
1/2 cup softened butter
3/4 cup brown sugar (6 Tbsp. for a half batch)
2 eggs
2 cups very ripe bananas, mashed (about 5 bananas)
1/2 cup chopped nuts (I just break walnuts up a bit rather than chop)
1/2 cup chocolate chips
1/2 teaspoon cinnamon
1 teaspoon vanilla

Dry ingredients:
2 cups flour
1 tsp. baking soda
1/4 tsp. salt

Large bowl for mixing
Bread loaf pan
Crisco or cooking spray

1) Preheat the oven to 350º .
2) Grease the bread pan.
3) In the large bowl, combine butter and brown sugar.
4) Mix in the rest of the wet ingredients. Stir well.
5) Add in the three dry ingredients. Combine just until everything is wet. Over stirring the flour makes the bread come out tough.
6) Pour into the mixture into the greased pan.
7) Bake for 60 minutes or until an inserted toothpick comes out clean

Lisa writes: I am terrible at baking and cooking! I tried making a pound cake for one of our BBQ's a few years back and it was much more than a pound! Somehow it weighed more than all the other food combined. LOL! Soooo, I have ONE recipe that I can make that actually turns out good and people ask for seconds!
I picked it up from a friend of mine who wanted me to have an easy recipe that I can't easily mess up. :)
You can make this in a single loaf pan. Alternately, you can use 4 mini-loaf pans. Change the baking time to 40 minutes. You could also cut the recipe in half and make 2 mini-loafs. These are a good gift size. Mom (Carolyn Bain) and everyone had so much fun at the last family reunion. I don't want to miss another one! Love you!
