Pasta-
1 c. flour
3 T. water
1/4 t. salt
1/2 t. olive oil
1 egg, beaten

Filling-
1/2 egg, beaten
1/3 c. ricotta cheese
1/4 c. Parmesan cheese
1/3 c. grated mozzarella cheese
3 T. snipped parsley
pinch nutmeg

Sauce-
1 T. butter
16 oz. tomato sauce
4 oz. chopped mushrooms
1/2 T. sugar
1 t. oregano

Pasta-
In mixing bowl, combine flour and salt. Make a well in the center. In separate bowl, combine egg, water, and oil. Pour in well and mix until dough forms a ball. Sprinkle counter with flour and knead dough 8-10 times.

Sauce-
Melt butter in saucepan. Add other ingredients and bring to boil. Reduce heat and simmer 15-20 minutes.

Assembly-
Roll out dough to 1/8 inch thick. Cut dough into 2 inch squares/rectangles. Place a round teaspoon of filling on one side of the square. Fold over and seal thoroughly with fork. Fill stock pot approximately half way with water. Add 1 t. salt and 1 T. olive oil. Bring to a boil and add pasta. Cook for 6-8 minutes and remove from water. Top with sauce and serve with garlic bread.
