Dough-
1 T. yeast
1 c. water (warm, not hot)
1 t. sugar
1 t. salt
1 egg
2 1/2 - 3 c. flour

Filling-
1 lb. Italian sausage (or other 'pizza' meat)
1/2 green pepper (chopped)
1/2 small onion (chopped)
8 oz. stewed tomatoes
3 oz. tomato paste
1/2 t. oregano
1/2 t. basil
1/4 t. red pepper flakes
8 oz. grated mozzarella

Dough-
Dissolve yeast and sugar in water. Let sit for 5-10 minutes. Stir in 1 c. flour, salt, and egg. Beat 2 minutes and gradually add remaining flour. Knead dough 5-10 minutes. Let dough rise until doubled in size, then punch down.

Filling-
Brown sausage, onion, and green pepper. Drain grease. Stir in other ingredients except the cheese and simmer 15 minutes.

Combine-
Divide dough into 6-8 pieces. Roll out dough into circles. Divide filling among the circles, keeping filling near the middle of each circle, then sprinkle each with cheese. Fold over and seal with a fork. Bake at 400º for 10-15 minutes.
