2 dressed ducks or 3 - 4 duck breasts
1 bunch small green onions chopped
3 chicken breasts (if ex-large 2)
1 bunch parsley, finely chopped
½ cup butter
1 tsp oregano
½ cup all-purpose flour
1 tsp thyme
3 cups chopped onion
1 tsp salt (or to taste)
3 cups chopped celery
1 tsp pepper (or to taste)
3 cups chopped green bell peppers
¼ tsp red pepper (or to taste)
3 cloves garlic, minced
1 tbsp Worcestershire sauce
1 large (20 oz.) can tomatoes, undrained
1 tsp hot sauce
Hot cooked rice
2 pounds shrimp, cooked and peeled, optional

Directions:
Directions:
Boil dressed ducks or duck breasts and chicken in salted water to cover until tender. Drain (save stock) and debone meat. Melt butter in a heavy iron pot and add flour to make roux. Stir constantly over medium heat until roux is brown(20-25 min). Add onions, celery, green peppers, and garlic and cook until vegs. tender. Add tomato paste, tomatoes, green onions, parsley and seasonings. Add 2 quarts stock and boil for ½ hour.
Cut meat in small bite pieces and add to pot with more stock if needed. Optional shrimp can be added and simmer for ½ hour. Serve gumbo over hot cooked rice. Makes around 10 servings
