2/3 c heavy cream
1/2 c light corn syrup
1/3 c brown sugar (light or dark)
1/4 c unsweetened natural cocoa powder (I like a DARK cocoa powder)
1/4 t salt (optional and to taste)
6 oz by weight dark or bittersweet chocolate, finely chopped
2 T unsalted butter
2 t vanilla extract

Directions:
Directions:
Bring cream, cory syrup, brown sugar, cocoa powder, optional salt, and half of the chopped chocolate to a boil in heavy bottomed saucepan over medium heat until chocolate is melted. Reduce heat and cook at a low boil for 5 minutes, stirring frequently. Turn off the heat and add butter, vanilla and remaining chocolate, stir until smooth. Cool slightly before serving.

Cooled sauce can be stored in a jar with a lid or in an airtight container in the fridge for at least 3 months (I think probably longer, but I don't think it will last that long!).

To reheat sauce place desired portion in a microwave safe bowl and heat in 15-30 second intervals until hot. Can also be reheated on the stove.
