2 quarts chopped onion
8 bell peppers, chopped
2 cups chopped jalapeņo peppers with seeds
3/4 cup sugar or less if you don't like it sweet
2 cups Apple Cider Vinegar
2 large (family size) bottles catsup, for thickening
1/2 cup salt
2 pods of garlic, chopped
1 bunch cilantro leaves, chopped
4 crushed bay leaves
1/4 cup lemon juice

Peel and core tomatoes. If you use fresh, parboil for 5 to ten minutes, place in ice cold water, and the peeling will pop open making them easy to peel. Chop the tomatoes in chunks for thick picante, and chop them fine for pureed picante. Reserve all of the juice when peeling the tomatoes. Mix tomatoes with the remaining ingredients. Place in a 3 qt. bowl or pot. Cook on medium heat for approximately 1-1/2 hours, stirring often. Do not let your picante stick to the bottom. You do not want the picante to boil, just simmer and heat thoroughly. Pour into sterilized, prepared jars and seal.
