1 pound crabmeat, picked free of shells
1/3 cup crushed crackers (Ritz)
3 green onions (green and white parts) finely chopped
1/3 cup mayonnaise
1 egg
2 tsp. Worcestershire sauce
1 tsp. dry mustard
1/2 lemon, juiced
1/4 tsp. garlic powder
1 tsp. salt
Dash cayenne pepper
four, for dusting
1/2 cup peanut oil
Dipping sauce

In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.
Chill these for about an hour. Can be frozen at this point and fried later.

Heat oil in large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned. (about 4-5 minutes). Carefully flip crab cakes and fry on the other side until golden brown, about 4 minutes. Serve warm with favorite dipping sauce.

This makes 6 large patties. You can make them whatever size you want and they would be great as an appetizer, or dinner depending on size.

These are the best ever. Very little filling and easy to make.
