2 pounds cottage cheese
2 eggs
½ cup butter, softened
1 tbsp parsley, dried
1 pinch salt
1 pinch pepper
1 tsp garlic powder
2 packages spinach, frozen, cooked & drained
1 cup Parmesan cheese, shredded
1 pound Monterey Jack, shredded
8 oz lasagna noodles, cooked & drained

Directions:
Directions:
Mix cottage cheese, seasonings, raw eggs, and butter. Grease a 9"x13" pan.
Place a layer of noodles in the pan followed by a layer of cottage cheese mix, then Monterey Jack cheese, spinach and Parmesan cheese. Repeat another two layers.
Bake at 350° for 40-45 minutes. Let set for 10 minutes then serve.
