Leftover mashed potatoes
chopped onion,
celery ( whatever amount you want)
sweet pickle relish
hard boiled egg(s)
plain, yellow mustard
mayonnaise

Directions:
I can't give you amounts of ingredients, because it will depend on your taste and how much mashed potatoes you have. Stir the onions, celery, relish and chopped egg into the potatoes. Experiment with the mustard (you want to make the potato salad light yellow). Use a little bit of the mustard and mayonnaise at a time until you get the salad the consistency you want it and it tastes right to you.
You don't want to put in too much or it will be soupy and you want it still to be a fairly thick consistency

A good use for leftover mashed potatoes or you can cook and mash potatoes as usual just for potato salad.
