Cake:
4 egg whites
1 11oz. can mandarin oranges, not drained
1 c. non-fat sour cream
1/2 c. applesauce
1 18-1/4 oz box lemon cake mix
Topping:
1 8oz. can crushed pineapple, not drained
1 c. non-fat sour cream
1 4-serving pkg. instant vanilla pudding
1 4oz. container light whipped topping

To prepare cake:
Preheat oven to 350 degrees. Spray 13 x 9" pan with cooking spray. In large bowl beat egg whites. Drain mandarin juice directly into bowl. Add sour cream and applesauce. Beat 30 seconds. Add cake mix. Beat on medium speed for 2 minutes. Pour batter into pan. Spread oranges evenly on top of batter. Bake 30 to 35 minutes or until cake springs back when lightly touched. Cool on wire rack.

To prepare topping: Combine crushed pineapple with juice and sour cream in medium bowl. Add pudding and beat with a mixer until thickened(60 seconds). Fold in whipped topping. Spread on cool cake. Store in civered container in refrigerator.
