2 lb. cooked and drained squash
1 small carrots grated
1 small onion chopped fine - precook
1 can cream of mushroom or chicken soup
1/4 cup melted butter
1-8 oz. container sour cream
1/4 cup chopped pimentos (optional)
1-8oz pack of Pepperidge Farm Cornbread Stuffing Mix

Directions:
Directions:
Combine the butter and stuffing mix. Place 1/2 of the mixture in a greased casserole dish - save the other half. Combine all other ingredients and salt/pepper to taste - pour over top of stuffing mix. Top with the remaining stuffing mixture. Bake at 350º for 30 minutes or until bubble. Cover with foil if browning too quickly.
