Granny Schwall's Dressing with Giblet Gravy Recipe

Ingredients: Dressing: 1 large loaf 2 day old white sandwich bread 1 large onion 1 can cream of chicken soup 6 large eggs 4 c cooked grits salted to taste 3 cup turkey or chicken broth 1 to 2 c cooked chicken or turkey cut into bite size pieces 3/4 stick butter
Gravy: 4 c chicken or turkey broth 1 c cooked chicken or turkey cut into bite size pieces 1 can cream of chicken soup 1/2 uncooked dressing 2 boiled eggs chopped 1/4 stick butter

Directions:Dressing: In a large bowl crumble loaf of bread into coarse crumbs. Put onion into blender with one cup water and blend until finely chopped. Put onion with water into large boiler and add enough water to cook enough grits to make four cups cooked grits. While water is coming to boil for grits add broth to bread mixture and stir well. Add eggs and cream of chicken soup to bread mixture and stir until mix well. Add in cooked chicken or turkey to bread mixture and stir until mix in well. Add hot cooked grits to the bread mixture last and stir until mixed well. Set aside 1/2 cup mixture for giblet gravy. Pour remaining mixture into 13 x 9 or larger baking dish and dot top with 3/4 stick butter. Bake in preheated 350º oven for 45 minutes to 1 hour depending on depth of pan.
Gravy: Before preparing the dressing place neck and giblets in boiler with 5 cups water and boil until well done. Remove giblets from broth, let cool then pick as much meat as you can from the bones. You can chop up the giblets if desired and add to neck meat. Add enough meat from cooked chicken or turkey to neck and giblet meat to make one cup. Set aside until dressing is ready to be put in oven. When dressing is put into the oven, pour broth from cooked giblets into large measuring cup and place 4 cups back into boiler. Add cream of chicken soup and mix with wire whip to blend soup into broth then add butter. Put mixture back on stove and bring to boil over medium heat. When mixture boils the 1/2 cup reserved dressing, chicken or turkey and chopped boiled eggs. Bring back to boil stirring frequently. Turn down and let simmer while dressing is cooking stirring frequently. The mixture should reduce slightly. Serve over dressing. |

Notes: This has been a Powell Family favorite for as long as I can remember. Granny always made it for all the important family gathering and no Thanksgiving was complete with out it. Now her children and grandchildren carry on the tradition by having Granny Schwall's Dressing at our family Thanksgiving Dinner.
