1 quart whipping cream
½ tsp salt
¼ tsp ground black pepper
¼ tsp ground red pepper
14 manicotti shells
2 pounds unpeeled, large fresh raw shrimp
3 Tbsp butter
1 cup onion, chopped
1 cup green pepper, chopped
¼ cup celery, chopped
1 clove garlic, minced
1 pound fresh crabmeat, drained and flaked
½ cup (2 ounces) Cheddar cheese, shredded
½ cup (2 ounces) Monterey Jack pepper cheese, shredded

Combine the first 4 ingredients in a saucepan; cook over medium-high heat 30 minutes or until thickened and reduced to 2 cups. Set aside. (I have found this takes closer to an hour and reduced it to 2-3 cups as I like a little more juice in mine.)

Cook manicotti according to package directions. Drain and set aside.

Peel shrimp and devein, if desired. Chop and set aside. (Be sure to use raw shrimp as it will have more flavor. You can find it deveined and shelled and it works just as well.)

Heat butter in a large dutch oven over medium-high heat; add onion and next 3 ingredients. Cook, stirring constantly, 5 minutes or until tender.

Add shrimp and crab meat and cook, stirring constantly 5 minutes or until shrimp has turned pink. Cool 10 minutes and drain well.

Combine seafood mixture and whipping cream mixture. Fill manicotti shells and place in 2 lightly greased 11x7x1 ½ inch baking dishes. Sprinkle with cheeses (I like to use maybe 3 ounces of each) and cover with foil.

Bake at 350 deg., covered, for 20 minutes. Uncover and bake an additional 15 minutes. Serve immediately.
