2 small or 1 large box lemon jello
2 tsp. salt
2 c. boiling water
1 c. cold water
1/2 c. vinegar
cucumber slices
1/2 c. shredded carrots
2 T chopped pinenuts

Directions:
Directions:
Dissolve lemon jello and salt in boiling water. Add cold water and vinegar. Chill until thickened. Fold in cucumber slices, shredded carrots, and chopped pinenuts. Pour in mold and chill 4 hours or until set. Garnish with mayonaise and salad greens if desired.
