1/2 cup chopped fresh flat-leaf parsley
1/3 cup light mayo
1/3 cup light sour cream
1 TBS tarragon white wine vinegar
1 1/2 - 3 tsp anchovy paste (to taste)
2 TBS fresh tarragon
1-2 TBS water, if needed
greens from one scallion

Directions:
Directions:
In a blender or food processor, combine all the ingredients EXCEPT water. Blend until smooth, adding water if necessary.

Improves with age and can be stored in refrigerator for up to 2-weeks.
