1 TBS Dijon mustard
4 TBS red wine vinegar
1 tsp honey
squeeze of a lemon
1/2 tsp each salt and pepper
chopped fresh herbs (chives, thyme, oregano, parsley - anything)
1/2 cup best quality extra-virgin olive oil
Directions:
Directions:
Add all ingredients to an old jar with a tight fitting lid. Shake vigorously.

Drizzle on salads, cold asparagus, or warm potatoes.
