3 lb medium beets

2 t caraway seeds
3 cups cider vinegar
3/4 c sugar

Directions:
Directions:
Wash but don't peel beets. Add water to cover and cook at a simmer til tender. Do not prick very often or they lose their color. Drain and cool.
Peel beets and cut into very thin slices. Place slices in sterilized jars and sprinkle with caraway seeds. Combine vinegar and sugar and bring to a boil. Pour the hot mixture over the beets. Seal and store for at least 3 weeks before using.
