1 16 oz. dry red kidney beans
1/2 cup vegetable oil or bacon drippings
1/2 tsp. parsley flakes
10 cups water
2 tsp. sugar
2 tsp. salt
2 tsp. seasoned salt
1/4 tsp. red pepper
1 tsp. granulated garlic
1 medium-sized green bell peppper, chopped
2 stalks celery, chopped
1 cup chopped smoked sausage

Directions:
Directions:
Combine all the ingredients except the sausage in a 4 quart stock. Cook, uncovered, over medium heat for 1 1/2 hours. Add sausage and cook for an additional 30 minutes or until beans are tender, adding more water if neded. Serve with white rice. For additional sausage, cut smoked sausage into links, pan fry and place on red beans and rice to serve.
Serves 10-12.
