Chicken Mole Enchiladas Recipe

1 chicken
1 med. onion chopped
2 cloves garlic chopped
1 C shortening or butter
1 C flour
1/3-1/2 C Chili
1 T salt
2 T sugar
1/4-1/3 C cocoa
1-2 blocks baking chocolate
4 gloves garlic, roasted and chopped
1 tsp. cinnamon
1-2 dozen corn tortillas

Boil chicken in a large stew pot with onion and garlic until done, 1-1 1/2 hours. Remove chicken, cool and debone into pieces. Save the broth. Make a rue of the shortening and flour in a large sauce pan. Add chili, salt and sugar mixing completely. Add cocoa and baking chocolate, stirring until melted and incorporated. Add roasted garlic and cinnamon stirring. At this point the mixture can be frozen or refrigerated until later. Add about 6 C of the chicken stock and cook down, then add 6 C more chicken stock also cooking down to a creamy consistency. Cook corn tortillas in oil just until soft and workable. Roll tortillas, chicken, sauce and cheese into enchiladas, place in baking dish with edges down, top with mole sauce and cheese. You can also layer in a casserole dish; sauce, tortilla, * chicken, sauce, cheese, tortilla * repeat ending with tortilla, sauce and cheese. Bake 350º for 30-45 minutes until bubbly.

Use high quality chili, the darker the better. It doesn't have to be hot to have a good flavor. Originally cocoa was used in savory dishes like this. The Europeans started to make it sweet. This is rich and surprisingly good for those of us used to chocolate. It is worth the time to prepare.
