2 lbs. cream cheese
1/2 cup sugar (#1)
3 Tbsp. Cream
1/3 cup flour (all purpose)
1 tsp. Orange extract
3 eggs
2 eggs, whites only
1/3 cup sugar (#2)
2 Tbsp. water
1-2 cups Mandarin oranges
4 oz. Apricot jelly

Directions:
Directions:
Mix the cream cheese, flour and sugar #1 until well blended. Then slowly blend in the cream and whole eggs and orange extract.

In a separate bowl, beat the egg whites with sugar #2 to a meringue consistency.

Mix the meringue with the cream cheese mixture and pour mixture into a well greased 10 inch springform cake pan.

Place cake pan on a baking sheet with water. Bake in a 300º-325º oven for about 1 1/2 hours. Cheesecake is done when an inserted knife comes out clean.

Cool cake. Arrange Mandarin oranges on top of cake. Heat water and jelly til jelly melts. Pour jelly glaze over top of cake. Keep refrigerated until ready to serve.
