4 lb saddle of deer
10T butter
1 T salt
1 t pepper
1 T flour
2 c boiling water
1 c sour cream non processed
1/3 muenster cheese

Directions:
Directions:
Wash and dry meat. Spread meat with 1/2 c or butter aned sprinkle with
spices. Put in shallow roasting pan and a pre-heated 450º oven for 15 min. Reduce heat to 350º adding boiling water. Cook 2-3 hrs. til tender.
Baste meat frequently during cooking. Put meat on platter add gravy.
Gravy: melt 1 t of butter and add 1 t flour. gradually stir in pan drippings.
Cook on low stirring constantly til smooth and thickened. Stir in soured
cream and cheese. When cheese has melted add one more T of butter and remove from heat. Stir til butter melts and serve with meat.
