2 c sifted flour
1 t baking powder
1 c and 2T sugar for egg whites
1 c butter
1 egg, well beaten
1t vanilla extract
2 egg whites
1/2 c chopped almonds (optional)

Directions:
Directions:
Sift together flour and 1 c sugar. Cut in butter til coarse cornbread size. Add egg, vanilla, and 1 egg white that was beaten stiff. With floured fingers shape into balls. Beat the remaining white until foamy. Dip ball in egg white and roll into nuts. Place n greased sheets and flatten. Bake 350º. 12 to 14 min.
