2 eggs
1 t sugar
1/4 t salt
1 c milk
1 c sifted flour use a little more if batter is too thin.
Hot oil-enough to cover the rosette iron

Directions:
With a fork stir eggs till well beaten. To eggs, alternately, add sugar, flour and milk. A smooth batter is essential. If necessary, pour batter through a sieve. This amount makes about 40 rosettes. Let stand 2 hours. Put rosette inron into hot oil to heat before dipping into batter. Do not let the batter come over the top of the iron. Return tooil,thouroughly covering the iron for at least 20 seconds or until nicely brown. Tilt iron and shake to remove as much oil as possible. Take off the rosette with a clean cloth and lay on paper. Serve with fruits, whipped cream or dusted with powdered sugar. Allow the temperature to reheat before starting the process over. 375º oil.
