3 garlic cloves, minced
2 boneless, skinless chicken breasts, sliced thin (optional)
2 tbsp olive oil
⅓ cup sun-dried tomatoes, chopped or cut in thirds
1¾ cup chicken broth
½ cup Kalamata olives, chopped
¼ cup chopped parsley
2 oz crumbled goat cheese
8-10 oz penne pasta, cooked according to directions and drained

Cook garlic and chicken in olive oil over medium heat for about 4 minutes. Add sun-dried tomatoes and chicken broth and simmer for 10 minutes. Add olives and parsley. Toss with pasta. Serve topped with goat cheese.
