1 lb Italian sausage, remove casings
1 cup chopped onion
2 garlic cloves, minced
3 cans of beef broth
1/2 cup red wine
1 28 oz can crushed tomatoes
1 28 oz can peeled whole tomatoes, cut up
1 15 oz can tomato sauce
1 cup sliced carrots
1/2 tsp dried basil
1/2 tsp dried oregano
1 Tbs parsley flakes
1 cup sliced zucchini
9 oz package of fresh cheese filled tortellini
1 med green bell pepper, chopped
Parmesan cheese

Directions:
Directions:
Remove casing from the sausage. In large stock pot, brown the sausage. Set aside, reserving the drippings. Cook the onions and garlic in drippings until tender, then add sausage, beef broth, red wine, all tomatoes, carrots, basil, oregano, and parsley. Stir well and bring to a boil. Reduce heat and simmer, covered, for 30 minutes. Stir in the zucchini, tortellini, and bell pepper. Simmer 20 minutes more until tortellini are tender. Sprinkle each serving with Parmesan cheese.

The wine is optional and to make gf, choose a gf pasta instead of the tortellini.
