- 1 cup onions, chopped
- 1/2 cup green pepper, diced
- 2 cloves garlic, minced
- 2 1/3 cups chicken broth
- 1 cup long grain brown rice, uncooked
- 1 cup salsa, chunky style (hot)
- 1/2 tsp chilli powder
- 1/2 tsp cumin, ground
- 1/4 tsp salt and pepper
- 2 tablespoons coriander, fresh, chopped
- mushroom, optional

Directions:

Spray a medium saucepan with non-stick spray. Add onions, green pepper, and garlic. Cook over medium heat until softened, about 5 min.
Add remaining ingredients, except coriander, and stir well. Bring to a boil. Reduce heat to medium low, cover partially, and cook for another 25-30 minutes, or until liquid has been absorbed and rice is tender.
Remove from heat, stir in coriander and serve.
