7 lbs prepared cucumber sticks

Pickling Syrup:
2 qt. cider vinegar
1 T. salt
9 cups sugar
1 T. mixed pickling spices
1 T. celery seed
3 sticks cinnamon
Green food coloring

Peel large cucumbers, cut in half, and scrape out seeds with a spoon. Cut in slender sticks about 1/2 inch wide and 4-5 inches long. Weigh them - 7 pounds. Pack loosely in a stone crock and cover with a mixture of 2 gal. water and 2 cups hydrated lime.
Start these pickles at night and let them stand a night and a day. Drain and mix well. Cover with fresh, cold water and let stand overnight. Next morning, drain well and make the pickling syrup. Tie spices and celery seed in cheesecloth and add with cinnamon to vinegar, salt and sugar. Blend in food coloring thoroughly. Pour over well drained cucumber sticks; bring to a boil and simmer until pickles are clear - 45-60mminutes. Remove cinnamon sticks and spice bag. Arrange pickles in hot sterilized jars; cover with pickling syrup and seal.
