3 eggs, slightly beaten
2 tsp. salt
dash pepper
1/4 cup + 2-3 Tbsp. flour
1 large onion, chopped
2 1/2 lbs. potatoes, peeled
oil, preferably canola
sour cream, applesauce (optional)

Directions:
Directions:
In large bowl, combine eggs, salt, pepper and 1/4 cup flour.
Stir in onion. Shred potatotes in food processor. Remove
potatoes from processor and squeeze out all liquid. Stir
potatoes into egg mixture until well combined. Let mixture
stand for 5 minutes for flour to absorb moisture. If mixture
is still too wet, add 1-3 Tbsp. flour. In large skillet over
medium-high heat, heat 1/4" oil. Using about 2 Tbsp. batter
per latke fry pancakes 6-8 minutes or until golden brown,
flipping halfway through. Drain on paper towels. Serve
with sour cream or applesauce if desired.

I put the shredded potatoes in a collander and press, stir them,
