- 40 large tomatoes, chopped
- 8 large sweet onions, diced
- 8 carrots, diced
- 12 jalapeņo, finely chopped
- 5 green pepper, chopped
- 5 chillies
- 2 cups celery, chopped
- 5 cloves garlic, finely chopped
- 1 cup cilantro or parsley, chopped can go 1/2 & 1/2
- 6 tablespoons sugar
- 4 tablespoons salt
- 2 tsp pepper
- 6 tablespoons basil
- 2 tsp cumin
- BOTTLED lime or lemon juice 1 tbsp per pint, 2 tbsp per quart

Cook on top of the stove till thickened to your taste.
