- 2 cups flour
- 1 cup flour, whole wheat
- 1 tablespoon sugar, granulated
- 1 tablespoon baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 eggs
- 2 1/2 cups buttermilk, or regular milk
- 1/2 cup yogurt, plain yogurt or( milk)
- 1/4 cup butter, melted
- 2 cups blue berries, fresh or frozen
- 2 tablespoons butter, for cooking

Directions:
Directions:
In a large bowl, whisk together whole wheat and white flour, sugar, baking powder, soda and salt. In separate bowl, whisk eggs, milks, yogurt (if using)and melted butter; pour over dry ingredients and sprinkle with blueberries. Stir gently until JUST combined. A few lumps should remain.

Heat frying pan on medium, add butter or oil, ladle 1/4 cup batter in heated pan.

Cook for 2 mins. or until bubbles break in the pancake; turn and cook for 1-2 min longer or until golden brown and puffed.

NOTES:

If using frozen blueberries, they may colour the batter but the outsides will still be a golden brown.
