25 or 30 lbs. asparagus
2 onions sliced
garlic ( 1 or 2 cloves in each jar)
Brine:
3 qts. water
2 qt. white vinegar
8 T canning salt
1 T peppercorns
3 T sugar
1 T onion powder
1 T garlic powder

Directions:
Directions:
Bring all the Brine ingredients to a boil and simmer for 15 minutes. Then strain. Put some onion rings in the bottom of each jar. Then add cloves of gralic. Cut and fit asparagus (tops down) in jar - leaving about 3/4 to 1 inch space at top. Fill jar with brine. Put lids on and process in water bath for 15 or 20 minutes.
