"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 eggs
1/2 teaspoon salt
3/4 cup water
2 cups all-purpose flour
1 large pot filled with salted boiling water
butter

Directions:
Directions:
Place large pot filled with salted water and bring to boil.

Combine eggs, salt, beating well with whisk.

Add flour, and water a little at a time.

Add only enough flour and water to make a soft, sticky dough.

Let mixture rest for about 10 mins.

Beat mixture again.

Using a smaller wooden cutting board and a long metal spatula ( dip the cutting board and spatula into the boiling water, so the mix won"t stick to them!)place a small amount (3 tablespoon) of dough onto the cutting board smooth a small amount of dough onto the edge/corner of the cutting board and start to cut tiny pieces with the spatula into boiling water. DO NOT add a lot of dough @ once into the water!
(if you have a spaetzel maker, that makes is easier as you want very small noodles).

The noodles are done when they float to the top.

Remove from water with large slotted spoon, and place in colander.Add a small amount of butter so they won't stick together, stir the noodles

Make sure you dip the spoon and cutting board into the water before and after using it and taste the noodle , so they are well cooked, before removing them, and also you added enough salt. The noodle will soak up the salt!
